Our story

Wild Barrel Brewing Company was first conceived by two friends Bill Sysak and Chris White in 2016 while sitting around one evening enjoying a cigar and some great craft beers. Bill Sobieski, an award-winning homebrewer of 25 years and long-time friend of Bill Sysak, was brought onboard to brew the beer, and the three friends and founders began the process of opening a brewery in San Diego, the craft beer capitol of America.

On September 30, 2017

Wild Barrel Brewing opened to the general public. Located in North San Diego county in the city of San Marcos, Wild Barrel has a 15-barrel brewhouse with a large spacious tasting room and well-trained friendly staff serving exceptional craft beer in a variety of styles.

We craft beer

Wild Barrel is known for its “Vice” series of fruited kettle sours, a constantly rotating selection of “West Coast” & “Hazy Juicy” IPA’s, big Pastry Stouts, and clean refreshing Lagers.

Open only three months, Wild Barrel was voted one of the Top 3 New Breweries in San Diego county for 2017. In 2018 Beer Advocate magazine stated, "Wild Barrel’s focus is on the customer experience and creating high quality beers using only the best ingredients has established them as one of the most exciting new breweries in the country. Wild Barrel is one of the Top 50 Breweries to watch in North America." Wild Barrel won consecutive Gold Medals at The Great American Beer Festival for it’s Vice Sans Fruit, the base beer for all its fruited sours, in the American Sour Ale category in 2020 and 2021. Wild Barrel has brewed more than 325 distinctive beers so far and has a 4.0 Untappd rating which is the 7th highest out of San Diego county’s 160 breweries.

Barrel program

Preston Weesner was added as a managing partner in 2017 to run the Barrel Program, Wild Barrel has added some prestigious barrel aged beers to the lineup. You can taste his passion for this art of blending through the bold and complex flavors. The barrels, time and patience turns the simplest of ingredients (fruit, spices) into a harmoniously blended beer. It is an art that Weesner has been practicing and perfecting for 17 years.

At Wild Barrel, Weesner has blended nearly 50 beers. Currently, he has 60 stout barrels and a little more than 100 sour barrels aging away!
